This past Thanksgiving, I spent four incredible days in Bogotá, trading turkey dinners for empanadas and exploring the vibrant heart of Colombia. The bustling streets of La Candelaria captivated me with its blend of culture, history, and modern energy.

On one of my travel days, I ventured beyond the city to Zipaquirá, home to the renowned Salt Cathedral. Referred to as “the first wonder of Colombia,” Zipaquirá boasts a unique blend of architecture, art, geology, and spirituality, making it a perfect addition to my Thanksgiving adventure.

Zipaquirá is home to a cathedral carved deep within a salt mine in the Andes. It is both an underground Roman Catholic Church and a place of pilgrimage over 600 feet below the earth’s surface. At the entrance, there is a slow descent into the earth, and I could feal a subtle yet surreal shift in my surroundings as the cool, mineral air greeted me. I gradually came across the faint glimmer of carved crosses and towering sculptures that emerged through the darkness. Every step brought we closer to exploring a hidden world, one crafted by humans yet also connected to the natural earth.

I continued my walk deeper underground, pausing at each Station of the Cross that unfolded along the path. The salt walls shimmered faintly, juxtaposing the old mine with the grandiosity of the cathedral itself.

After surfacing, I made my way to the charming town of Zipaquirá, its cobblestone streets and colonial architecture a perfect partner to the subterranean wonders I had just experienced. I appreciated the aroma of Colombian cuisine that wafted through the air, and I eventually ended up in a small, cozy restaurant.

I split a plate of grilled Colombian meat with a fellow traveler – better than a turkey dinner, in my opinion. This fantastic tasting platter featured a variety of meats, all with a unique smoky flavor. Next, I walked off my full belly in the nearby plaza, watching daily life unfold for the local citizens.

Twas a great way to celebrate Thanksgiving; I truly appreciated the incredible beauty of the Salt Cathedral and everything Zipaquerá had to offer!
